Roasted Beets w/ Cashew Cream

Roasting beets in the oven make beautiful, flavorful beets.

Roasted beet stuffed with cashew cream

Ingredients

1 1/4 cups soaked cashews

3 tbls water 

2 tbls apple cider vinegar

2 tbls lemon juice

13 cloves garlic

4 tbls nutritional yeast

4 tsp dijon mustard

sea salt and black pepper

Instructions

Scrub and peel 6-8 med beets.

rub with olive oil, then roast in 350’ oven till tender.

Blend all ingredients in a Vitamix till creamy, and carve the top in each beet.  Add a dollop of cream to each beet.  Top with toasted pine nuts and finely chopped parsley.

Notes

Quantity varies with the size and number of beets, and how much cream  will fit.  Extra cashew cream is nice offered as a side dish!
