Vegan tacos with no meat and no guilt, but plenty of flavor and satisfaction.

Napa cabbage, lettuce, or collard greens (for the wrap)

 Cashew Cheese Spread:

¼ cup fresh lemon juice

¼ cup Nama Shoyu

1  red bell pepper, chunked and seeded

1 to 1 ½ cups raw cashews, macadamia nuts, pine nuts, or a combination

Blend all ingredients till very smooth

“Meat” Filling:

1 ½ cups raw walnuts, fine chopped or ground in a food processor

chili powder to taste

1 ½ tsps ground cumin

¾ tsp coriander

2 tbls Nama Shoyu (soy sauce)

 Lots of fresh veggies (any combo)

Carrots (shredded)

Red onions (chopped)

Beets (shredded)

Sprouts

Cucumber

Bell pepper

Avocado

 

Top with fresh salsa
